This Festive Drink – How to Make It

WThis is an easy version of a drink featured on a new cocktail list. It's a batch prepared mix that's bursting full of flavours associated with Christmas time, which makes it excellent for a celebration. Save the extra citrus syrup for breakfast cocktails, puddings, or for another batch of the drink.

The Bikini Cocktail

Serves 10 servings

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Place the listed components in a pot, bring to a gentle boil, mixing so the sugar melts. Then, take off the burner allowing it to cool fully. Pour into a sealable bottle, seal keeping it in the refrigerator, where it will keep for up to a month.

Preparing the Batch Mix: Pour all the spirits and syrup in a large bottle, allow it to infuse for an hour, then filter it preferably using cheesecloth, making it completely strained.

To serve: Measure 85ml of the premix to a stirring glass containing ice, and stir carefully for a minute until cold. Filter into an frosted cocktail glass or a similar vessel, decorate with a few cranberries and complete it using a light spray with the mandarin essence over the drink.
